Mom's Manicotti

Yields: 24 filled crepes
Ingredients
Crepes
- 1 cup flour
- 1 cup water
- 4 eggs
Filling
- 1 lb ground beef
- 1 lb ricotta cheese
- 1 lb mozzarella cheese
- 2 eggs
Sauce
- 2 tablespoons oil
- 1 small onion, chopped
- 2 garlic cloves (or more)
- 1 tablespoon sugar
- 2 teaspoons salt
- 1 (16 ounce) can tomatoes
- 1 (6 ounce) can tomato paste
Directions
- Crepes: Mix ingredients in a large bowl. Makes 20 or more crepe-like pancakes.
- Filling: Brown beef. Drain. Mix with cheeses and eggs.
- Sauce: In saucepan, cook garlic and onion in oil. Stir in rest of ingredients. Break up tomatoes. Cook 20 minutes.
- Spread 1/2 of sauce in pan. Place filled crepes on top. Them more sauce.
- Bake 1 hour at 350 degrees.
- Makes 20 or more.
