Mom's Gazpacho

Ingredients
- 4 tomatoes, skinned
- 2 green peppers
- 2 medium onions
- 1 garlic clove
- 3⁄4 cup tomato juice
- 2 cucumbers
- 1⁄4 cup vinegar
- 1⁄4 cup olive oil
- salt, to taste
- pepper, to taste
- crouton, to garnish
Directions
- Puree 1 onion, 1 green pepper, 1 cucumber, 1 clove garlic and 4 tomatoes in a blender.
- In a very big bowl, mix together oil, vinegar, tomato juice, salt and pepper. Add the mixture in the blender to this and blend well.
- Chop remaining onion, cucumber, and green pepper. Serve this on top of each bowl of soup and garnish with croutons.
- Serve ice cold.
