Mom's Dirty Rice

Yields: 4 cup servings
Ingredients
- 1 bunch green onion, sliced
- 1 stalk celery
- 1⁄2 green pepper, chopped
- 1⁄2-1 tablespoon margarine
- 2 lbs mild sausage
- 1 lb hot sausage
- 2 (10 3/4ounce) cans chicken broth
- 1 (10 3/4ounce) can water (use empty broth can)
- 2 cups uncooked long grain white rice
Directions
- Sauté onion, celery, and green pepper in margarine until tender.
- In separate pan brown sausage drain meat.
- In large saucepan combine vegetables, sausage, broth, and water and rice.
- Simmer 30-40 minutes until rice is done.
