Mom's Beef Roll-Ups

My mom made these once at a party that I had, and everyone loved them, so I make them all the time now. They are really easy and something you can make ahead of time. Show more

Yields: 8 roll-up

Ingredients

  • 2 (8 ounce) packages  light garden vegetable cream cheese spread
  • 1  tablespoon pickle, minced
  • 1  tablespoon onion, minced
  • 8  tortillas
  • 1  head romaine lettuce, cleaned and dried well
  • 1 (2 1/2ounce) jar  dried beef

Directions

  1. Beat cream cheese, mix in pickle and onion.
  2. Spread cream cheese mixture on tortilla, top with lettuce and dried beef and roll tortilla. *I use 1 piece of lettuce, sometimes 1 1/2, depending on size of the lettuce. I use 3 or 4 pieces of dried beef, depending on how much I have. Make sure you don't put too much on the tortilla, otherwise it won't roll well.
  3. Cut in about 1/2 inch pieces.
  4. Notes: This should make about 8 roll-ups depending on how much cream cheese you spread on the tortilla. You can use the bigger, burrito-style tortillas. There are many things you can subistute. I used to use turkey and cheese instead of beef, but people liked the beef better, so I stopped making the turkey roll-ups.
