Momma's Fruit Cocktail Cake

Not sure where it originated and some on here close - but no cigar to this! While I'm told it is good cold, it never lasted long enough to find out...I'm sure you'll have the same issue. It's one-bowl, quick and easy! Show more

Serves: 4-6

Yields: 1 cake

Ingredients

  • 1 (16 ounce) can  fruit cocktail in heavy syrup
  • 1  egg
  • 1  cup sugar, white
  • 1  cup flour
  • 1  teaspoon baking soda
  • 12 teaspoon salt
  • 12 cup  chopped  nuts
  • 12 cup brown sugar

Directions

  1. Drain the fruit, beating the juice with the egg till creamy.
  2. Add the flour, sugar, baking soda and salt.
  3. Fold in the fruit.
  4. Pour into a greased 8 x 8 inch pan. Top with nuts and brown sugar.
  5. Bake for 35 minute at 350.
  6. Serve with dollops of fresh whipped cream.
