Mom T's Salmon Patties

Another one of my mom's kid friendly salmon recipes. I love how quick and easy these are, any time of day! Show more

Serves: 4

Yields: 4 patties

Ingredients

  •  olive oil
  • 2 (6 ounce) cans  boneless skinless pink salmon
  • 2  eggs, lightly beaten
  • 1  tablespoon onion, minced
  • 1  teaspoon parsley, chopped

Directions

  1. Heat olive oil in a skillet.
  2. Drain salmon and flake it into a bowl. Add eggs, onion and parsely. Mix well.
  3. Shape into 4 patties and fry in pan until lightly browned on both sides and cooked through, about 8-10 minutes.
  4. Note- Sometimes I don't feel like making the patties and just throw it all in the skillet and make scrambled salmon.
