Mole Sauce (Peanut Butter Base)

This is a Non chocolate mole sauce. A traditional Mexican sauce that is served over chicken.

  1. In blender place broth, tomatoes with green chilies, tortillas, and peanut butter.
  2. Cover and blend till smooth. May need to do in two batches.
  3. Turn into pot and bring to boiling. Reduce heat and simmer uncovered 15 to 20 minutes or till thickened, stirring offten.
  4. Spoon over chicken.
  5. Bake covered in 350*F oven for 30 or till heated through.
