Molasses Feather Cake

I haven't tried this one yet, but it is on my to-do list, it certainly does sound easy enough for me!! I have yet to try one of Crosby Molasses recipes that I haven't liked, I always soup it up with my favorite icing or topping or fresh fruit, and away we go!!

• Yields: 1 2 layer cake

Ingredients

• 2 1⁄2 cups  sifted cake flour
• 1⁄2 cup sugar
• 1  teaspoon baking powder
• 1⁄2 teaspoon baking soda
• 1  teaspoon salt
• 1⁄2 cup shortening
• 1  teaspoon vanilla
• 3⁄4 cup molasses
• 2  eggs
• 1⁄2 cup milk

Directions

1. Sift flour, sugar, baking powder, baking soda and salt into mixing bowl. Blend in shortening, molasses, eggs, and flavoring. Beat 2 minutes by hand or by electric mixer. Add milk and beat 2 more minutes. Pour into well-greased layer cake pans.
2. Bake at 375F for 25 minutes.
