Moist Apple Quickbread

Ingredients
- 2 eggs
- 1⁄2 cup vegetable oil
- 3⁄4 cup sugar
- 1 teaspoon vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon cinnamon
- 2 cups grated apples
- 3⁄4 cup finely chopped walnuts
Directions
- Preheat oven to 350 degrees. Grease and flour a quick bread pan. Alternatively, line pan with parchment sprayed with cooking oil.
- Peel and core apples. Grate them or chop them finely in a food processor. Set aside.
- Beat eggs, oil, sugar, and vanilla until consistent.
- In a separate bowl, mix flour, baking powder, baking soda, salt and cinnamon.
- Mix the dry ingredients into the wet ingredients.
- Add the apples and walnuts. Mix well.
- Pour mixture into prepared pan.
- Bake for 50 to 60 minutes, or until the center is set and it passes the toothpick test.
- Serve warm with cream cheese.
