Moist Apple Quickbread

It is apple season in NY! This is an adaptation of a recipe I found on-line. Easy to make, moist, and delicious. Very nice toasted with a smear of cream cheese. Show more

  1. Preheat oven to 350 degrees. Grease and flour a quick bread pan. Alternatively, line pan with parchment sprayed with cooking oil.
  2. Peel and core apples. Grate them or chop them finely in a food processor. Set aside.
  3. Beat eggs, oil, sugar, and vanilla until consistent.
  4. In a separate bowl, mix flour, baking powder, baking soda, salt and cinnamon.
  5. Mix the dry ingredients into the wet ingredients.
  6. Add the apples and walnuts. Mix well.
  7. Pour mixture into prepared pan.
  8. Bake for 50 to 60 minutes, or until the center is set and it passes the toothpick test.
  9. Serve warm with cream cheese.
