Mock Sour Cream

This tastes surprisingly like real sour cream. Try it on potatoes, Mexican dishes-whenever you want a creamy, piquant sensation.

• Yields: 1 1/2 cups

Ingredients

• 1  cup low fat cottage cheese
• 2  tablespoons fresh lemon juice
• 2  tablespoons mayonnaise
• 1⁄4 cup buttermilk
• 1⁄2 lemon, zest of
• 1  pinch salt

Directions

1. In a blender or food processor, blend all the above ingredients until smooth.
2. Chill.
