Mock Egg Salad

Ingredients
- 1 (12 ounce) package firm tofu
- 1 cup light mayonnaise
- 2 tablespoons mustard
- 1⁄2 cup pickle relish (sweet or dill)
- 1⁄2 cup chopped onion
Directions
- Open tofu package. Drain and dry tofu.
- Put tofu in large bowl and dice into cubes.
- Add mayo, mustard, relish and onion and gently stir, spread on bread and eat.
- Variations: Try making it half yogurt in the mayo for less calories. Add real boiled eggs and double your protein. Try sweet hot mustard for a little kick. For extra crunch, add diced bits of celery and apple. Have fun, try to experiment a little.
