Mock Cream Cheese Frosting

Yields: 1 8inch cake
Ingredients
- 8 ounces lite firm tofu, squeezed of excess liquid
- 2 tablespoons Splenda sugar substitute
- 1⁄2 teaspoon vanilla extract or 1⁄2 teaspoon walnut extract
Directions
- Whiz all ingredients in a food processor.
- Spread on cooled cake.
- Enough to cover top of an 8X8 cake.
