Mocha Snacking Cake

Ingredients
- 2⁄3 cup butter, softened
- 1 1⁄2 cups granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 2⁄3 cups all-purpose flour
- 3⁄4 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1 1⁄3 cups brewed coffee, chilled (strong)
Directions
- Make 1 1/3 cups of coffee. Chill until cool.
- Grease and flour an 8-inch (2L) square metal cake pan.
- In large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, just until incorporated. Stir in vanilla.
- In separate bowl, sift together flour, cocoa, baking soda, baking powder, and salt; add to butter mixture alternately with coffee (make 2 additions of dry ingredients and 1 of coffee). Beat until almost smooth. Scrape into prepared pan; spread evenly.
- Bake at 350F (180C) in center of oven until cake tester inserted in centre comes out clean, 45 to 57 minutes. Let cool in pan on rack.
