Mjuk Peppar Kakor

A Swedish Christmas cookie with a delicious spice flavor. Don't let the spice measurements fool you. For those that enjoy a rich spice cookie this creates a robust flavor but not overwhelming. These are an excellent, crisp cookie for any time of the year and can be cut into shapes.

• Yields: 4-5 Dozen

Ingredients

• 1  cup butter
• 1 1⁄2 cups sugar
• 3  tablespoons white corn syrup
• 2  eggs
• 3 1⁄2 cups flour
• 2  teaspoons baking soda
• 1  tablespoon cinnamon
• 1  tablespoon ginger
• 1  tablespoon clove

Directions

1. Set oven to 350.
2. Cream Butter and sugar. Add the syrup and eggs. Add together the sifted dry ingredients. Work into a stiff dough.
3. Roll 1/4" or greater on a floured board. Cut into shapes and bake for about 10 minutes. Leave 1" spacing between cookies.
4. A nice variation is to add the finely grated peel of 1/2 orange.
