Mixed Vegetable Casserole

Ingredients

  • 1 (16 ounce) package  frozen mixed vegetables, thawed
  • 1  large onion, chopped
  • 3  celery ribs, chopped
  • 1  cup  shredded cheddar cheese
  • 1  cup mayonnaise (reduced fat or fat-free can NOT be substituted)
  • 34 cup  crushed  butter flavored cracker
  • 14 cup butter or 14 cup margarine, melted

Directions

  1. In a bowl, combine the first five ingredients.
  2. Spoon into a greased 1-1/2-qt. baking dish.
  3. Toss the cracker crumbs and butter; sprinkle over the top.
  4. Bake uncovered at 350 degrees for 30-35 minutes or until heated through.
