Mixed Potato Cakes

Ingredients
- 0.5 (24 ounce) bag frozen mashed potatoes, thawed and coarsely mashed
- 0.5 (24 ounce) bag frozen mashed sweet potatoes, thawed and coarsely mashed
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon dried chipotle powder
- 1⁄4 teaspoon fresh ground black pepper
- 1 egg, lightly beaten
- 1⁄4 cup flour
- 2 tablespoons vegetable oil
Directions
- Preheat oven to 200°F
- Pour flour into a shallow dish and set aside.
- Heat vegetable oil over medium high heat in a large skillet.
- In a large mixing bowl, combine potatoes, salt, chipotle seasoning, pepper and egg.
- Form the mixture into 8 equal size cakes.
- Working in batches, dredge potato cakes in flour, add to the skillet and saute for 2 – 3 minutes per side or until golden brown.
- Transfer to the oven to keep warm and repeat for remaining potato cakes.
