Mixed Bean Soup

Ingredients
- 1⁄2 cup diced celery
- 1⁄2 cup diced onion
- 2 (19 ounce) cans mixed white and colored beans
- 2 (28 ounce) cans diced tomatoes
- 4 tablespoons tomato paste
- 1 tablespoon oil
- 1 teaspoon chili powder
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
Directions
- Saute onions and celery in oil in a large pot.
- Add beans, including liquid. Add rest of ingredients and stir in 3 cups of hot water. Bring to a boil, reduce heat and simmer for 1 hour.
