Ingredients for Cake
- 2 cups sugar
- 1⁄3 cup cocoa
- 1 1⁄2 cups butter, softened
- 4 eggs
- 1 teaspoon vanilla extract
- 1 1⁄2 cups flour
- 1 1⁄3 cups flaked coconut
- 1 1⁄2 cups pecans, chopped
- 1 (7 ounce) jar marshmallow creme
Ingredients for Frosting
- 1 lb confectioners' sugar
- 1⁄3 cup cocoa
- 1⁄2 cup butter, softened
- 1⁄2 cup evaporated milk
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350F and grease/flour a 13 x 9 cake pan.
- In a mixing bowl, cream sugar, cocoa, and butter, until light and fluffy.
- Add eggs, one at a time.
- Add vanilla extract.
- Mix well.
- Stir in flour, coconut, and pecans.
- Pour into prepared pan.
- Bake 40 minutes.
- When done, spread marshmallow creme over top.
- Cool before frosting.
- Make frosting: Sift together confectioners' sugar and cocoa.
- Set aside.
- Cream butter in a mixing bowl.
- Add sugar-cocoa mixture.
- Fold in evaporated milk and vanilla extract.
