Minty Cucumber Dip

Yields: 1 1/2 cups
Ingredients
- 1⁄2 cup finely chopped cucumber
- 1⁄4 teaspoon salt
- 1 cup Greek yogurt
- 1 tablespoon lime juice
- 1 tablespoon chopped mint leaf
Directions
- In a fine mesh sieve, toss cucumber with salt. Place over a bowl and set aside to drain for 15 minutes.
- Squeeze excess moisture from cucumber and transfer to a small serving bowl. Add remaining ingredients and stir to blend.
