Minted Watermelon Salad

Ingredients
- 7 lbs watermelon
- 4 cups watercress, snipped
- 1⁄2 medium red onion, cut in wedges
- 2 tablespoons of fresh mint, snipped
- 2 tablespoons olive oil
- 1 dash salt
- 1 dash pepper
Directions
- Cut watermelon in 1 inch cubes. Cover and chill.
- In large bowl, toss together watercress, red onion, mint, olive oil, salt and pepper. Sprinkle mixture over watermelon. Serve cold.
