Mint Honeydew Ice

Ingredients
- 8 cups honeydew melon, cubed
- 1 1⁄2 cups fresh mint leaves, lightly packed
- 3⁄4 cup water
- 3⁄4 cup sugar
- 4 1⁄2 teaspoons lemon juice
- 1⁄4 teaspoon salt
Directions
- To make simple syrup: Mix water and sugar in a saucepan. Bring to a boil and then turn heat down to low. Simmer 3 to 5 minutes or until sugar is completely dissolved. Allow to cool before proceeding.
- Blend the melon, simple syrup, mint, lemon juice and and salt in a blender or food processor. In batches, if necessary. Freeze in an ice cream maker according to manufacturer's instructions.
