Mint Chocolate Cheesecake

I just love this stuff! Mint and Chocolate!!!!!!!!

Ingredients

  • 1 34 cups  chocolate wafer crumbs
  • 14 cup  melted butter
  • 3 (8 ounce) packages cream cheese, softened
  • 34 cup white sugar
  • 3  large eggs
  • 13 cup creme de menthe or 34 teaspoon  mint extract (with 10 drops green food coloring)
  • 3  ounces white chocolate, melted
  • 1  chocolate mint  candy bar, for garnish

Directions

  1. Preheat oven to 325 degrees.
  2. In a medium bowl combine the wafer crumbs and butter.
  3. Press into the bottom and 2 inches up the sides of a 9 inch springform pan.
  4. Set aside.
  5. In a large bowl beat together the cream cheese and sugar until smooth.
  6. Beat in eggs one at a time until blended.
  7. Beat in liqueur and melted white chocolate.
  8. Pour over crust and bake for 50 minutes or until center is JUST set.
  9. Remove from oven and place on a wire rack.
  10. Run a knife around the sides of the pan to loosen.
  11. Cool at room temp and then chill in the fridge overnight.
  12. To make curls shave chocolate bar with a vegetable peeler and place on top of cheesecake.
