Mint Candied Walnuts

Yields: 3 cups
Ingredients
- 1 cup sugar
- 1⁄4 teaspoon salt
- 1⁄3 cup water
- 1 tablespoon corn syrup
- 6 large marshmallows
- 4 drops peppermint extract
- 2 1⁄2 cups walnut halves
Directions
- Mix all ingredients except walnuts in heavy saucepan.
- Cook over medium-high heat until candy thermometer reachers 235°.
- Remove from heat.
- Mix in walnuts.
- Turn walnuts out onto waxed paper and quickly separate.
- Let cool completely.
