Miniature Cupcake New York Style Cheesecakes

Ingredients
- 24 vanilla wafer cookies
- 24 ounces cream cheese
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla
- 1⁄4 teaspoon nutmeg
Directions
- Preheat oven 325 degrees. Line two muffin pans with paper cups (DO NOT USE FOIL CUPS).
- Place one vanilla wafer rounded side up in the bottom of each cup.
- Beat cream cheese in a large bowl with mixer on medium speed until smooth.
- Cream together cheese and sugar.
- Add eggs one at a time until well combined. Mix together remaining ingredients.
- Spoon into cups so that they are halfway full.
- Bake 20-25 minutes or until firm and toothpick tester comes clean.
- Promptly refrigerate and top with whipped cream or fruit filling if you'd like or serve plain.
