Yields: 36 mini cheesecakes
Ingredients
- 2 eggs
- 2 (250 g) packages cream cheese, softened
- 3⁄4 cup sugar
- 1 teaspoon vanilla
- vanilla wafer cookie
- 2 tablespoons melted butter
- pie filling (your choice of flavor or flavors)
Directions
- Combine eggs, cream cheese, and vanilla until creamy. Place paper paper cupcake liners in the bottom of muffin tin. Butter each liner lightly with a little melted butter. Put one vanilla wafer in the bottom of cupcake liner. Top wafer with cream cheese mixture and pie filling. Bake at 350F for 15 minutes.
