Minestrone

Ingredients
- 1 lb lean ground beef
- 1 medium carrot, diced
- 1⁄2 large onion, diced
- 1 stalk celery, diced
- 1 small zucchini, diced
- 1 medium potato, peeled and diced
- 3⁄4 cup small shell pasta or 3⁄4 cup macaroni
- 1 (10 ounce) can tomato soup
- 6 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon basil
- 1 (19 ounce) can kidney beans, drained
- 1⁄2 cup fresh parsley
- salt and pepper
- 1 dash hot pepper sauce
Directions
- Brown beef in Dutch oven.
- Add remaining ingredients and simmer until vegetables and pasta are soft.
- About 1 hour.
- Serve with crusty bread for a hearty lunch.
