Minestrone

Ingredients
- 3 cups water
- 1 lb beef stew meat
- 1 cup chopped onion
- 1 cup sliced carrot
- 1 cup sliced celery
- 1 (14 ounce) can Italian tomatoes
- 2 teaspoons salt
- 1⁄2 cup shredded cabbage
- 1 tablespoon basil
- 1 teaspoon minced garlic
- 1 teaspoon oregano
- 1 (16 ounce) can garbanzo beans
- 10 ounces frozen mixed vegetables
- 1 cup sliced zucchini
Directions
- Place water and meat in slow cooker. Add remaining ingredients except for frozen vegetables and zucchini.
- Cover and cook on low for 10 hours. Add vegetables and zucchini during last hour of cooking.
- Remove from slow cooker and allow to cool. Place in freezer bag. Label and freeze.
- To serve: thaw. Heat until hot and bubbly. Serve topped with Parmesan cheese.
