Minestrone

Ingredients
- 1 1⁄2 lbs lean ground beef
- 2 medium onions
- 1 teaspoon parsley (dry)
- 4 garlic cloves (minced)
- 1⁄2 cup celery
- 1⁄2 cup carrot (sliced)
- 1 cup cabbage (chopped)
- 1 (14 ounce) can beans (lima)
- 16 ounces tomatoes (stewed)
- 6 cups beef bouillon
- 1⁄2 teaspoon basil
- 1⁄2 teaspoon oregano
- 1 dash cayenne pepper
- 1⁄2 cup spaghetti (broken)
- 1 dash salt and pepper
- 1⁄4 cup parmesan cheese (optional)
Directions
- Brown meat and onions.
- Place in large pot.
- Add garlic and celery. Cook for 10 minutes stirring continually.
- Add 6 cups of beef bouillon and remaining ingredients EXCEPT spaghetti and cheese.
- Bring to boil, cover and simmer 30 minutes.
- Add spaghetti and simmer till tender. (~10 minutes).
- Serve and add parmesan cheese on top.
