Mincemeat Fruitcake Cookies

Ingredients

  • 14 cup  vegetable oil
  • 12 cup granulated sugar
  • 1  egg
  • 1  teaspoon  almond extract
  • 1  cup  mincemeat
  • 1 34 cups all-purpose flour
  • 1  teaspoon baking powder
  • 12 teaspoon salt
  • 12 cup  candied red cherries
  • 12 cup  green glazed cherries

Directions

  1. Preheat oven to 350 degrees F, & lightly coat baking sheet with cooking spray.
  2. In large bowl, beat oil & sugar until light.
  3. Beat in egg & almond extract until smooth.
  4. Stir in mincemeat.
  5. In medium bowl, whisk together flour, baking powder & salt.
  6. Beat into egg mixture until blended.
  7. Stir in cherries.
  8. Drop by rounded teasoonfuls onto parchment paper lined baking sheets.
  9. Bake 12-14 minutes, or until lightly brown & firm.
  10. Cool on wire rack.
