Mincemeat

Yields: 7-8 quarts
Ingredients
- 3 lbs beef or 3 lbs pork
- 2 teaspoons salt
- 3 quarts applesauce
- 1 cup apple cider
- 5 cups grape juice
- 3 lbs raisins
- 1 lb currants
- 3 lemons, juice and zest of
- 1 cup molasses, plus
- 2 tablespoons molasses
- 1 cup dark corn syrup
- 1 teaspoon oleo
- 3 tablespoons cider vinegar
- 3 1⁄2 teaspoons cinnamon
- 5 teaspoons fresh ginger, minced
- 3 1⁄2 teaspoons nutmeg
- 1 1⁄4 teaspoons cloves
- 4 1⁄2 teaspoons brown sugar
Directions
- Cook the meat and 1 tsp salt in the crockpot for 8 hours or until very tender; then grind coarsely.
- Add all other ingredients and cook another 4 hours, seasoning to taste.
- Extra mincemeat can be canned or frozen to store.
