Millet Pancakes/Waffles

Ingredients
- 1 cup millet flour
- 1⁄2 cup barley or 1⁄2 cup oat flour
- 1 teaspoon baking powder
- 2 tablespoons cornstarch or 2 tablespoons arrowroot
- 1⁄2 teaspoon salt
- 2 teaspoons sugar
- 2 eggs
- 1 1⁄3 cups milk
- 3 tablespoons canola oil
- 1⁄2 cup dried fruit
Directions
- Mix together the dry ingredients, mix in the wet ones until just mixed. Cook on a hot waffle iron, or frying pan until golden brown.
