Mild Vegetarian Chili

Ingredients
- 3 medium carrots, peeled and chopped
- 2 medium tomatoes, chopped
- 3⁄4 cup mushroom
- 2 medium zucchini, chopped
- 1 green bell pepper, chopped
- 1 sweet red pepper, chopped
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- 1 (15 ounce) can pinto beans
- 1 (15 ounce) can black beans
- 2 (750 ml) salsa (I use homemade)
- 1 teaspoon cumin
- 2 tablespoons dried oregano
- 2 tablespoons dried parsley
- 2 tablespoons chili powder
- 1 tablespoon sugar
- salt & pepper
Directions
- In a large pot, saute all vegetables and garlic in the oil.
- Drain and rinse the beans.
- Add to pot along with remaining ingredients.
- Bring to boil.
- Once boiling, let simmer for 30 minutes.
