Migas Tacos

Ingredients
- 1⁄3 cup whole wheat tortilla chip, lightly crushed
- 1⁄4 cup onion, chopped
- 1⁄4 cup tomatoes, chopped
- 2 tablespoons jalapeno peppers, chopped
- 1 teaspoon olive oil
- 1⁄4 cup bacon bits
- 1⁄2 cup egg substitute
- salt and pepper
- 2 whole wheat tortillas, 8 in
- 1⁄2 cup 2% cheddar cheese
Directions
- Heat oil in 8 " skillet.
- Saute torilla chips, onion, tomato, and pepper 3 to 4 mins till veggies are tender. Add bacon bits and stir.
- Add in egg substitute and cook till edges are set. Carefully lift up edges to let the uncooked egg go underneath.
- Once egg is set spoon 1/2 of mixture over each tortilla and top with 1/2 of the cheese. Roll up in your favorite fashion and enjoy.
