Middle Eastern Tahini Dip

Yields: 2 cups
Ingredients
- 1 cup tahini
- 1⁄3 cup water
- 1 teaspoon finely grated lemon rind
- 1⁄3 cup lemon juice
- 1⁄3 cup water
- 3 tablespoons chopped fresh parsley
- 3 garlic cloves, minced
- 3⁄4 teaspoon ground cumin
- 3⁄4 teaspoon salt
Directions
- In bowl, stir 1/3 cup water into tahini.
- Stir in lemon rind and 1/3 cup lemon juice, then another 1/3 cup water.
- Stir in parsley, garlic, cumin and salt.
- (Dip can be covered and refrigerated for up to 8 hours. Serve at room temperature.).
