Middle Eastern Salad Rolls

Ingredients
- 6 iceberg lettuce leaves, cut in half
- 1⁄2 cup hummus
- 1⁄2 cup grated carrot
- 1⁄2 cup coarsely chopped kalamata olive
- 1⁄2 cup diced English cucumber
- 1⁄2 cup coarsely chopped tomatoes
- 1⁄4 cup flat leaf parsley
- 1 tablespoon hot pepper sauce
- 1 tablespoon lemon juice
Directions
- Place lettuce on work surface. Spoon 4 teaspoons hummus down center.
- Divide carrot, olives, cucumber and tomato on top. Top with parsley pepper sauce and lemon juice.
- Roll up lettuce to enclose and place seam side down.
