Microwaved Cocoa Muffins

Taken from Fabulous Desserts. Cooking time is for 6-7 muffins. If you are making more or less at one time, adjust cooking time.

Ingredients

• 1  cup flour
• 2⁄3 cup sugar
• 1⁄4 cup  cocoa
• 2  teaspoons baking powder
• 1⁄2 teaspoon salt
• 1⁄2 cup milk
• 1⁄4 cup  oil
• 1  egg
• 1  cup raisins
• 1⁄2 cup pecans, chopped (optional)

Directions

1. Combine flour, sugar, cocoa, baking powder and salt in a med bowl.
2. Add milk, oil, egg stir just until moistened.
3. Fold in raisins and nuts.
4. Fill 6-7 muffin papers 1/2 full.
5. Place cups in microwave-proof cupcake or muffin tin.
6. Microwave on high for 2-2 1/2 minutes.
7. Repeat process with remaining batter.
