Microwave Soynut Brittle

Directions

  1. Prepare all ingredients in advance.
  2. Lightly grease a cookie sheet.
  3. In a 1 1/2 quart casserole, stir together sugar and syrup.
  4. Microwave at high 4 minutes.
  5. Stir in soynuts.
  6. Microwave at high 3 to 5 minutes, until light brown.
  7. Add butter and vanilla to syrup, blending well.
  8. Microwave at high 1 to 2 minutes.
  9. Soynuts will be lightly browned and syrup very hot.
  10. Add baking soda and gently stir until light and foamy, but make sure you do it quickly or the brittle will get too cool to pour!
  11. Pour mixture onto cookie sheet.
  12. Let cool 1/2 to 1 hour.
  13. When cool, break into small pieces and store in air-tight container.
  14. Note: Although quick and easy, syrup mixture will be very hot!
  15. Please use caution when preparing this recipe.
