Microwave Brownies

These are so easy! I used to make these with my friends for a late night treat after a night of fun. They don't beat brownies from scratch but close enough for me! I have also made a lighter version with egg beaters and 1/2 applesauce 1/2 butter with great results!

• Yields: 8 pieces

Ingredients

• 2  eggs, large
• 1  cup white sugar
• 1⁄2 teaspoon salt
• 1  teaspoon vanilla
• 1⁄2 cup butter, melted
• 3⁄4 cup flour
• 1⁄4 cup  cocoa

Directions

1. Mix eggs, sugar, salt and vanilla, beat 1 minute or until batter turns light.
2. Add melted butter, flour and cocoa.
3. Pour into a greased 8" microwave safe dish.
4. Cook on high for 4-5 minutes or until center is set.
