Michael's Fried Zucchini

We had this at a recent art opening.They were on a platter, thin, golden brown, and garnished with two long sprigs of lavender. Michael duplicated it at home. Yummy! Show more

Yields: 24 rounds

Ingredients

  • 1  lb zucchini
  • 1  teaspoon salt (sea salt or Kosher)
  • 12 cup cornmeal
  • 2  tablespoons  peanut oil

Directions

  1. Slice zucchini into thin rounds, sprinkle with salt, and set aside to sweat.
  2. Dredge with corn meal.
  3. Sauté in oil on medium high heat.
  4. Drain and allow to cool just slightly.
  5. Serve.
