Meyer Lemon Vinaigrette

A simple salad dressing from "Real Simple" magazine. Meyer lemons are almost like a cross between a lemon and an orange and are therefore sweeter than an ordinary lemon. You could still make this with regular lemon juice, but you would want to add a little sugar or honey.

Ingredients

• 3  tablespoons  fresh meyer lemon juice
• 3  tablespoons olive oil
•  kosher salt
•  fresh ground black pepper
