Mexican Wedding Cake

We used to make this to take for parties, it's a very good sweet and rich cake. If you wanted to make it fancy put it in two round pans and make it a layer cake with icing in the middle and on the sides, use whole pecans and place around the sides, top with pineapple rings with strawberries sitting in the middles.

Ingredients

• Cake

• 2  cups sugar
• 2  cups flour
• 1  teaspoon baking soda
• 1  teaspoon vanilla
• 1 (20 ounce) can pineapple, undrained
• 2  eggs

• Icing

• 1⁄2 cup margarine
• 1 (8 ounce) package cream cheese
• 3⁄4 cup sugar
• 1  teaspoon vanilla
• 1⁄2 cup pecans

Directions

1. Cake:.
2. Mix together and bake in a 9x12 pan, greased and floured at 350 degrees for 30 minutes.
3. Icing:.
4. Beat butter, cream cheese, and sugar until stiff and fluffy.
5. Mix in pecans and vanilla and ice cake while still slightly warm.
