Mexican Surprise (Low Carb)

Ingredients
Meat
- 2 lbs ground beef
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 cup sour cream
- 8 ounces Velveeta cheese, cubed
Toppings
- shredded lettuce
- chopped tomato
- shredded cheese
- sour cream
- taco sauce (we use La Victoria Red or Green)
Directions
- Brown ground beef in large frying pan until no longer pink.
- Season with chili powder, salt and pepper.
- Stir in sour cream and simmer for 5 minutes.
- Add velveeta and stir until melted.
- Serve in a bowl with shredded lettuce, chopped tomatoes, shredded cheese, extra sour cream and Taco Sauce (if desired).
