Mexican Style Chicken and Lime Soup

Ingredients
- 2 quarts chicken stock
- 1 1⁄2 lbs boneless skinless chicken, cubed
- 2 large tomatoes, peeled seeded and chopped
- 1 cup corn
- 1 cup diced zucchini
- 1⁄2 cup chopped onion
- 1⁄2 cup green bell pepper
- 1⁄4 cup chopped cilantro
- 1⁄4 cup lime juice
- salt and pepper
- 24 inches corn tortillas, cut into 10 wedges
- cooking spray
- thinly sliced lime (to garnish)
Directions
- Combine broth, chicken and vegetables in slow cooker; cover and cook on low 6-8 hours, adding cilantro and lime juice during last 30 minutes.
- Season to taste with salt and pepper.
- Spray tortillas with cooking spray and toss in skillet until browned and crisp, about 5 minutes. Add tortilla wedges to soup bowls; ladle soup over.
- Float lime slices on top of soup.
