Mexican Soup

Ok, so the name isn't exactly the best but I wasn't really sure what to call it. It definitely has a mexican flair to it though. My husband and I needed to use up some beef and didn't have a whole lot in the house and this is what we came up with it. Turned out surprisingly awesome! Show more

Directions

  1. Brown ground beef and drain.
  2. cook rice per package directions.
  3. mix everything in a big pot and bring to a boil and simmer for 10min.
  4. serve with shredded cheese and sour cream.
