Mexican Scrambled Eggs.

I made this for my families Sunday breakfast. Everyone thought they were good but spicy. When I made this recipe I could not get the omlet to flip so I ended up scambling everything. We served ours with sour cream. Next time I make these I'm going to make my omlet with the chilies mix in the eggs and before it's all cooked I'm gonna top it with the chorizo and cheese. I got this recipe from Obesity Help. It was posted by Carla W. Show more

Directions

  1. Cook chorizo in large skillet. When it is cooked pour eggs and season to taste. Make like a large omellet. Once side one is done flip in sections and place green chillis and cheese on. Cover it to let the cheese melt.
  2. Serve with salsa, sour cream and gucamole to taste. Yummy.
  3. Note: You can add bell peppers, mushrooms, olives, and onions to taste.
