Mexican Rice

Ingredients
- 1 cup long grain rice
- 1 tablespoon vegetable oil
- 1⁄2 onion, finely chopped
- 1 chicken bouillon cube
- 1⁄2 teaspoon cumin
- 1 garlic clove
- 1⁄2 bell pepper, chopped
- 1 jalapeno, chopped (optional)
- 1 tomatoes, chopped
- salt and pepper
- 1⁄2 cup fresh cilantro, chopped
Directions
- Brown rice in oil for three minutes.
- Add chicken broth and bring to a boil.
- Add onion, bell pepper, jalapeño, and tomato.
- Add bullion cube, salt, pepper, cumin, cilantro and garlic.
- Boil.
- Cover and reduce heat to low.
- Cook 20 minutes.
