Mexican Quinoa

Yields: 4 cups
Ingredients
- 1 teaspoon cumin
- 1 cup quinoa
- 1 cup black beans
- 1 cup corn
- 1 cup salsa
Directions
- Prepare quinoa: Bring 2 cups water to a boil, add 1 cup quinoa. Turn heat to low and simmer for 12-15 minutes until quinoa has soaked up water and can be fluffed with a fork.
- Stir in cumin.
- Add black beans, corn and salsa to a skillet and heat for 3 minutes.
- Fold quinoa mixture into skillet mixture and heat an additional 2 minutes.
