Mexican Meatloaf

Ingredients
- 1 1⁄2 lbs ground beef
- 1⁄2 cup breadcrumbs
- 1 egg, beaten
- 2 shallots, minced
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon ground cumin
- 1⁄4 teaspoon dried thyme
- 1⁄3 cup salsa
- 2 teaspoons rice vinegar
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
Directions
- Preheat oven to 350.
- In a large bowl, combine all ingredients. Mix thoroughly.
- On a baking sheet form meat mixture into a loaf about 9x5 inches (I would use a bread pan).
- Bake 1 hour or until nicely browned and cooked in the center and juices run clear.
- Remove from oven; drain of excess grease. Slice and serve.
