Mexican Meatballs

Great for pasta dinners, a mexican entree, or an appetizer. Could be done over the stove too.

Yields: 4-5 maindish servings

Ingredients

  • 1  lb ground beef
  • 4  slices  white bread, torn into small pieces
  • 1  onion, chopped
  • 13 cup milk
  • 1  egg yolk, beaten, with white reserved
  • 12 teaspoon salt
  • 18 teaspoon pepper
  • 1  egg white, beaten from the reserved egg white
  • 1  cup  corn flakes, crushed
  •  oil, for browning
  • 1 (10 3/4ounce) can  tomato soup
  • 1  small green bell pepper, chopped
  • 12 cup water

Directions

  1. Combine ground beef, bread, onion, milk, egg yolk, salt, and pepper and form into balls.
  2. Roll balls in egg white and then in crumbs.
  3. Brown in hot oiled skillet and then place in a slow cooker.
  4. Combine soup, pepper, and water, and pour over meatballs.
  5. Cover and cook on low 8 hours, or on low for 3-4 hours.
