Mexican Meatballs

Ingredients
- 14 ounces ground lean pork
- 1⁄2 cup grated zucchini
- 1⁄2 cup crushed tortilla chips
- 1⁄2 cup scallion, chopped
- 1⁄4 cup cilantro
- 1 egg
- 1 teaspoon minced garlic
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 10 ounces enchilada sauce
Directions
- Mix all ingredients together. Roll into 24 meatballs. Brown in a little oil in a large nonstick skillet. Add enchilada sauce. Cover, simmer 5 minutes or until meatballs are cooked.
